but...
Baby is not here yet.
I've been anxious, bored, and restless since I stopped working. I've been preparing for this date and here we are; no baby yet.
There are thousands of lists with things to do to prep for life post-baby. Since I've never had a life post-baby before I had no idea which were useful and which were eccentric.

It's the essence of the holiday. Everyone is detoxing and increasing their intake of green vegetables, and smoothies are a popular choice. I like green smoothies as much as the next vegan.
Here is my take on this year's green smoothie.
Oh wait... It's not green!
Tricky tricky.

It's not vegetarian or anything but it's an interesting concept. She takes pre-made items from the grocery store and slightly alters or personalizes them to make a "homemade" meal quicker and more easily. She might take pre-made pudding cups and pre-made ladyfingers and put them together to make a homemade trifle dish.

I have gotten a few questions about my vegan diet while I've been pregnant.
I try to live with the idea that my body knows what it needs. If I can trust my body's intuition and provide what it's asking for... then I'll be alright. It's a double edged sword though because I have to get my body to trust me. My body has to trust that I will give what it is asking for, and fairly quickly Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-4071476510615733604.post-15824917497416453212012-12-26T16:14:00.002-04:002012-12-26T16:14:27.693-04:00Almost New Years!Remember when I had a blog?
I do.
It's been such a long time...
I'm still eating and living nourishingly in my corner of the world. Are you?
I've played around with raw food a little. I like raw food, but I also really like cooked food. I won't be going 100% raw anytime soon.
Living in a way that nourishes your soul is harder to define than eating in a way that nourishes your body. UltimatelyUnknownnoreply@blogger.com1tag:blogger.com,1999:blog-4071476510615733604.post-62304450045929673962012-07-31T23:16:00.001-04:002012-07-31T23:17:00.399-04:00Foodie Pen Pals Reveal Day
It's the last day of the month which means it's Foodie Pen Pals reveal day. I was traveling this month and got my package while I was gone, but I was so excited to get it as soon as I got home! Isn't real mail the best, ah how things change :)
Gia, my pen pal extraordinaire, was also very patient with me because I wasn't on top of my emails like normal and she put up Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-4071476510615733604.post-13959951200311722192012-06-30T09:14:00.000-04:002012-06-30T09:14:05.731-04:00Foodie Pen Pal Reveal Day
It's the last day of the month which means it's my second month of Foodie Pen Pals. I actually received my pen pal goodies TODAY!
I was sort of sad about having nothing to post about when I decided to check the mail one last time and what was there? This big ol'box of foodie pen pal love.
Beth was my pen pal this month and she had a busy month but managed to send this out to me! What a coincidence.
Pasta Salad is one of those summer-time picnic bbq staples that I remember being weary of from the beginning. For me as a child pasta came covered in cheese sauce or tomato sauce and nothing else. It made me uncomfortable that this pasta was cold, and covered in who knows what, and with all kinds of spices on there. I rememberUnknownnoreply@blogger.com0tag:blogger.com,1999:blog-4071476510615733604.post-17004570736282819722012-06-22T16:11:00.000-04:002012-06-22T16:16:07.289-04:00Chickpea Chickun SaladDid you eat a lot of chicken salad growing up?
Our family did... I don't particularly know why. I guess because my mom loves the stuff.
Chicken salad is decidedly not vegan or even animal friendly. Normally these "salads" don't have the highest quality of ingredients since it's all combined and flavors are covered up. They are also high in cholesterol, saturated, and trans fats.
To be fair! Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-4071476510615733604.post-59617698575185849102012-06-18T09:00:00.000-04:002012-06-18T11:41:33.447-04:00Sushi SaladI love sushi, I mean, who doesn't?
Even if you don't eat meat (like me!) sushi is delicious. Cucumber, avocado, rice, seaweed, wasabi... All good things!
This salad doesn't have any rice, but you could totally add some rice if you wanted too! I didn't want to wait for rice to cook, it takes forever right?
Ingredients:
1/2 cup Cucumber
1/4 Orange Pepper
1 Radish
5-8 Cherry Tomatoes

We eat from the beginning...
Champagne to celebrate a new job. Which Chris and I did when he got the job he has now.
Pancakes to snuggle in bed with a loved one. I made my mother breakfast in bed on Mother's day for 6 years running I think. (hopefully she liked toast)
The hot cocoa my dad managed to microwave for me when we had snow days.

I like eating baked things!
Baking is hard because you can't really improvise, you kind of have to measure and I don't like following other people's recipes.
Sometimes the desire for a vegan baked good surpasses the annoyance of measuring cups and I go for it.
I've been making treats off of the Happy Healthy Life blog.
First I made this AMAZING blueberry cake. It Unknownnoreply@blogger.com1tag:blogger.com,1999:blog-4071476510615733604.post-52043617735629207322012-06-04T11:45:00.000-04:002012-06-04T14:14:35.400-04:00I'm eating more Fruit!Want to know what I've really been eating?
It's not gourmet, or fancy, or hard to make...
It's fruit.
I'm obsessed lately.
I went through this phase in life where I didn't really eat fruit, how sad. I thought it was full of sugar and not great to eat a lot of it. I limited my fruits to small amounts.
That phase has passed! Hallelujah.
Fruit is amazing! It has so many vitamins, plenty of fiberUnknownnoreply@blogger.com0tag:blogger.com,1999:blog-4071476510615733604.post-62343277198656282292012-05-31T09:00:00.000-04:002012-05-31T09:00:15.178-04:00Foodie Pen Pals May Reveal Day!

Not only have I not been blogging but I honestly haven't really been cooking.
It's been quick easy foods around my house.
What do you do when you're lacking inspiration for things in your life?
I tried a few things:
I read my new cookbook "Let them eat Vegan" by Dreena Burton although it didn't have very many pictures.

I love cookbooks.
What are your favorite cookbooks? I love recommendations.
My newest one is called Blissful Bites by the blissful chef.
It's really nice. It's organized by season which is helpful if you're trying to eat local and fresh foods. It's mostly gluten-free from what I can tell. It's all vegan. Some of it's raw. In the end... I like it!

THEN it's covered in cheese, baked and served over noodles with tomato sauce.
What's scary to me is that most people would consider eggplant parm a healthy choice at an italian restaurant. The word healthy is tricky because Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-4071476510615733604.post-45738274661874918322012-04-30T11:21:00.000-04:002012-04-30T11:25:18.852-04:00Spruce up that Basic SaladWhen I go out to eat and I order the side salad I'm normally presented with one of two things.
1. A small plate of iceberg lettuce with tomato, red cabbage shreds, and carrot shreds.
2. A spring mix base with onion, tomato, and carrot.
It's no wonder that people don't think of salads as delicious crunchy addicting bowls of beauty!

It sounds like a recipe.
Like a recipe in a cookbook.
If you make it you'll feel like you made a real dish, not just a bowl of things from the fridge that were about to go bad.
Let's not tell everyone that it's mostly a bowl of items from the fridge.
Let's keep them thinking we're real chefs!

My favorite thing to read about is how much other people love food.
The Fat Free Vegan posted this post featuring a fat free roux.
A roux, traditionally, is a cooking base of flour and fat, normally butter. It's the base to most soups, cheese sauces, or gumbos.

We got into New Orleans around 9pm at night but we were hungry!
We found Mia's which was super cute especially for a wednesday night. There were two guys playing live music and we were able to sit on the patio with Piper, there were actually two other doggies on the patio too.
I ordered the Eggplant Steak. How cute is that name?

I mean, that's a given.
If we don't agree on that statement it's likely we won't agree on anything else so you can probably stop reading now.
Classic road trip snacks at my house were pringles, grapes, chicken salad, and maybe cheese-its. My dad always wanted my mom to make tuna salad but she hates the smell of tuna, so we had chicken.
